The wait is over!
BAKING WITH DORIE arrived today, and I’m already baking from it! I started today with the Everything Cake. This recipe is classic Greenspan, in that she encourages us to play and substitute to make her (always well-tested and reliable) recipes our own. Here’s her introduction to the recipe:”I had trouble deciding on a name for this easy one-bowl cake that you mix by hand. Itâs like a sponge cake, but moist and a smidge chewy; you taste the butter, but you wouldnât call the cake rich, just good. Its beauty lies in its possibilities. You can flavor it by adding other ingredients to the batter or by infusing spices, herbs or tea into the melted butter that goes into it. It can welcome fruit, fresh or dried, either in the batter or on top of it (the fruit usually sinks, but thatâs fine). It can be frostedâI like it with a confectionersâ sugar icingâor brushed with warm jam, or just sprinkled with sugar. It can be sliced and filled, and itâs nice with a topping of poached fruit, whipped cream or even hot fudge sauce. Iâve suggested a few ideas (see Playing Around), but there are many more possibilities for you to discover on your own.I trust her recipes because they work, and she encourages me to trust my own imagination (I added Calvados) and play around!

Dorie Greenspan is a delight and so are her baking recipes!As a baking novice I decided to challenge myself and make pate a choux dough so I could make cream puffs.I started out with another recipe and it came out horrible ( look at 2nd photo) even though I followed all the instructions.So I whipped out my Baking with Dorie cookbook and used her recipe and although my piping needs some work my cream puffs came out perfectly!I have yet to try any other recipes but Iâve read the book cover to cover a few times and each recipe is well written giving perfect instruction,Even down to where you need to place your oven racks at to ensure proper cooking.Plus she offers fun ways to switch up the recipes and encourages trying new ingredients and offers suggestions to what would work well for each recipe.There are a lot of really interesting recipes that Iâve never heard of as well.So donât second guess getting this book!

Does not disappoint
What a fabulous cookbook for those who love to bake. The recipes are very clear and ingredients are such that you typically have on hand. The Photography and layout of the book is also attractive! I wanted to get started on about 12 recipes immediately after reading this great book cover to cover.

Graspable for beginner/intermediate skill
(the Lemony Yogurt Muffin recipe was used in my review photo)I’ve made several recipes from this book – and I’ve only once had to plan a trip to the grocery store, but most are spontaneous and the recipes require ingredients that most have on hand. I like to think of these as templates for what I’d like to change or do for myself, but for someone trying to learn how to bake and cook, I appreciate the breakdowns, suggestions and images provided. At my level, this kind of book was exactly what I hoped for.

Great recipes from sweet to savory
This book is among the very finest in our cookbook collection. The recipes are varied from breakfast baked goods like scones, muffins and pound cakes to savory appetizers to dessert cakes. So far I have made 4 items from the book and each turned out perfectly. The recipes are clearly written leaving nothing to guess work. It seems with some of the other cookbooks that I have, some of the recipes are not well thought out or even tested. Ms. Greenspan is known for her recipe testing, development and tweaking. This book is clearly the reflection of a great deal of creativity and hard work to perfect each.

I am so glad I bought this book! It is worth ever penny of investment. It has every ecipe you will ever need. The recipes span across different types of baking items – from cake to bread to pastry to cookies. Name it and it’s there! Almost every recipe has a corresponding picture. There are details on how you can play around with the recipe by adding different ingredients as well. It’s probably the best baking book I’ve bought. So happy with my purchase!

Loved the idea of uncomplicated, simple baking and this book by Dorie has captured that extremely well. Reading her words feels like being with her in person. In her kitchen, just the two of you deciding what to make today. With a knowledgeable mentor, conversational, no pretentious mannerisms. Just here to help you explore your own baking style and plan.Iâve baked the Everything Cake and the Miso Maple Loaf. Both were easy and turned out well. The Miso Maple Loaf looks stunning and sophisticated even though itâs straight forward to make. Both will be happily consumed again.The photos and instructions are excellent. I highly recommend this cookbook for anyone looking for a foundational baking book with good details without being fussy. I just wish every recipe had a picture attached to it. Looking forward to making additional sweets and savoury concoctions in the years ahead.
