Discover the real techniques, ingredients, and stories behind the Italian dishes you know and love—and the ones you’ve yet to try—with more than 145 delicious recipes that bring simplicity back to Italian cooking, from the James Beard Award-winning team at Milk Street.
Forget everything you thought you knew about Italian food. In Italy, cooks throw away their garlic, they don’t stir their polenta, and they never labor over pans of risotto. But they do make enormous meatballs that are tender and light, and they occasionally break all the rules when making pasta.
The editors at Milk Street have spent years scouring small eateries, local markets, farms and home kitchens from Lombardy to Calabria and from Sardinia to Sicily in search of fresh takes on classic recipes as well as little-known regional favorites that never crossed the Atlantic.
On our travels we found new ways with pasta, from foolproof cacio e pepe in Rome to Puglia’s olive oil—crisped fettuccine with chickpeas and a lemony pesto from Amalfi, where the pasta itself is enriched with citrus. Plus some surprising tomato sauces, including spaghetti all’assassina from Bari—spicy, charred, and made in one skillet.
We visited a Neapolitan trattoria where five sisters serenade diners with opera and serve an eggplant Parmesan that’s rich, but never fried. In Northern Italy, we made meatball-like bread dumplings simmered in chicken broth. And in Sardinia, a hearty herb soup studded with pancetta, beans, and tiny nuggets of pasta.
Milk Street Backroads Italy give you a seat at the table with Italian cooks sharing the food they love, handed down from generation to generation.

Best Italian cookbook ever.
Milk Street has outdone itself. I am Italian and have hundreds of cookbooks and a vast Italian cookbook collection. I have no coffee table book. This will be the one. I canât wait to start cooking these recipes. (The book just arrived an hr ago, first day of publication). It is authentic. Love the pictures. Love the stories of the people, places, ingredients and foods. I see my grandmother from Bari making orichette by hand, then laying them out on a sheet on a bed to dry til dinner (the big Italian Sunday dinner that goes on for hours), and all us cousins sneaking in and eating them raw lol. She mustâve made extra because there was always plenty for everyone at the table. Thank you, Milk Street for such a wonderful book.

Outstanding!
I pre-ordered and was not disappointed. Worth the wait. One of the best cookbooks in my collection. Great recipes. Easy to make, nothing too difficult and adapted to the American pantry with a few new ingredients to discover. I especially enjoyed the stories that accompany the recipes and learning about the dishes (many of them new to me), the regions they come from, and the cooks who inspired the recipes. Am happily cooking my way through the book. Well done!

Great print, useless ebook.
This is a hard review to write. I first bought the Kindle version and wanted to write a furious 2-3 star review because the book is almost unusable on Kindle. No contents fur recipes, not even at the chapter level. No index. The only way to make the cookbook even marginally usefully was to manually bookmark every recipe. But the contents were so good! I finally bought the hardback even though I’ll have to evict one, or even two, books from our way overflowing shelves (it’s as big book). And the hardback is beautiful! And it has the index they didn’t bother to put in the Kindle edition (adding insult to injury). So I’m reluctantly settling on four stars.

Great recipes, few humble ingredients
I have enjoyed the book. Many great recipes and a great story to go along with the recipes. Good reading

Magnificent tour of Italian cooking.
We have a lot of cookbooks and Italian cookbooks in particular. This is another level. As much a tour of the culinary traditions of Italy rather than simply another cookbook. I usually use cookbooks for inspiration. This one will be used for cooking and, more importantly, changing techniques to reflect some of the ideas in this wonderful cookbook.

POOR DELIVERY PACKAGING
Love the book.Donât know what happened to your packing process⦠Been buying Amazon books since many years with no problems. Recently books are delivered in oversized boxes, no packaging material. Books not shrink wrapped. Resulting often in binding damage. Very disappointing.

Stunningly beautiful book
Wow! What a treasure this cookbook is!! I devoured it when it arrived, pouring over the absolutely gorgeous photography, reveling in the stories, and dog-earring nearly every page! I canât wait to make these recipes of my ancestors, using the freshest of ingredients! Buy this book-itâs cheaper than a trip to Italy but it WILL transport you there! Even if you donât cook, youâll love this beautiful tome!

One Italian cookbook to rule them all!
I literally could not find anything I disliked about this book. It literally made many other cookbooks in my collection irrelevant. I look very much to digging into these recipes.
