It’s time to twirl and slurp bowls of pasta, ramen, spaetzle, lo mein, and more with 125 recipes for noodles from around the world, from the James Beard Award-winning team at Milk Street
Nearly every culture serves some sort of noodle, from fettuccine, ramen and spaetzle, to lo mein, gnocchi and udon. So we traveled the world to learn the secrets to the best pad Thai, Italian ragu, spicy North African couscous and buttery Turkish noodles flecked with feta. In Italy, we were taught the real fettuccine Alfredo—so much lighter, simpler and more satisfying than what we knew. In Sapporo, Japan, we learned how to develop the deep umami flavors of miso ramen with minimal time and effort. And from Ho Chi Minh City to Lima, we learned the art of the quick noodle stir-fry, from Vietnamese shrimp noodles to Peruvian chicken and pasta The world of noodles also includes cool salads, steaming soups, plump dumplings and bowls of well-sauced shapes of all kind. Noodles are a perfect canvas for spring and summer vegetables, as well as hearty wintertime baked casseroles. And if speed is your need, try hoisin-ginger noodles or our cheesy one-pan cacio e pepe, both ready in 20 minutes.
We include guides to using the noodles you have on hand, and show how to make classic noodles from scratch—from homemade udon and hand-cut wheat noodles to fresh egg pasta, orecchiette and potato gnocchi.
What’s for dinner? Use your noodle.

Now this is pasta
One of the best cookbooks I have ever had. If you truly enjoy pasta (i grew up eating pasta 3-4 times a week) then this cookbook will surely delight everyone in the family. There’s a ton of different recipes that will entice any palate. The recipes provide enough variety that no two are alike. Buon appetito!

Have tried several recipes:Garlic and Black Pepper Noodles with Shrimp and Chives, Spaghetti with Goat Cheese Mint and Peas, Stir Fried Rice Noodles With Beef and Broccolini . All the recipes were very good without any changes! Easy and Fun!

A variety of recipes I canât wait to try
Just received my copy and I am very excited to try these recipes! The book itself is well-made and substantial, photos are stunning, and the recipes well-written and clear. Although there are recipes for home-made pasta, you can substitute store-bought if you are not up to the challenge of making your own. Another great thing is that each recipe is so different from the next, the variety is extensive (soups and pasta dishes in every form), you will never get bored.Canât wait to try the spaetzle, saw this on Milk Steet and it looks delicious!I recommend this cookbook book.

Lots of recipes to love!
This book contains short recipes and a photo for each dish. What’s not to like about that. For my starter, I tried the sauerkraut soup. I thought the recipe could have provided a little more direction, for example, how much of the juice to drain from canned kraut and how to do it. But the result was excellent, especially the second day. I skipped the tarragon, which does not fit with an E European dish, also skipped celery and substituted more carrots. Made my own pasta. The result: HEAVENLY!!! All who ate loved it. And, it was easy to prepare. The time estimates for prepping and cooking were overly optimistic.

Familiar and not so familiar recipes from all over the world.
We have several of the Milk Street cookbooks and use them regularly. This one offers a wide range of recipes from various cultures, everything from familiar Italian dishes to Asian noodle soups. One good rule for Christopher Kimball books: unless you know that you like very spicy food, always begin with around half the cayenne or other hot pepper called for, and add more if you like after tasting.

Milk Street cookbooks are reliably excellent, but not if you are pressed for time. The recipes are a bit more elaborate, but the result is well worth the effort.

I ordered this book without checking on its contents. I was hoping to find the Milk Street recipe for Singapore Noodles, a dish I had seen prepared on the TV series…but NO. Not included. I was so disappointed that I nearly returned the book.
