Such a beautiful book. It was pleasantly surprising to see how thick it is, and how easy it is to understand. As a ND fellow I love the little pictures of the ingredients and how easy to follow are the recipes. Its got not only the recipes, but also things I call DIYs where you can learn how to regrow veggies, how to do ferments, powders, sauces and other fun stuff! I marked EVERYTHING so I could follow along easily in busy days- this is one of my favs so far!

Nourishing recipes that use a few to a lot of ingredients
I’m not sure what I can really add about this cookbook that has not already been said but I will give it a go. First off if you want to eat more veggies this book will be a tremendous help. Just about every recipe has a handful of veggies or fruit in it. Second of all its suppose to be a zero waste cookbook. I gathered from it you should store foods properly and make use of what you already have. I guess that’s possible but in making some of these recipes I did need to run out to the store to gather what I needed to make certain ones. There is a section of got this make that meal ideas. I found some of the recipes to not have a long ingredients list but some way too many. I made the chick pea pot pie which as 16 ingredients. Don’t get me wrong I like the majority of the recipes but some just seem so time consuming. I must be a slow cause that pot pie after making the biscuit part took me one hour to make. I like that each recipe has a photo and the nutritional info is in the back of the book but the info does not include the sodium or sugar intake. More than a few of the recipes do have soy so I will just skip those but she does share a recipe to make soy free tofu. I also am not a vegan just wanted to add more veggies to my diet and this book helps with that. So far the flavors have been good in the recipes I have made. I would say the butternut squash sheet pan soup and mousse on the loose have been my favorites. Who knew using chick pea water (aquafaba) with chocolate you could have a easy delicious dessert. I do have Carleigh’s first book which I like a lot as well. It’s hard for me to pick which one I think is better. I think her first one uses less ingredients in recipes but this new one has a lot of recipes that I still want to try. If you can only chose one I would start out with her first book but if you can definitely get this one as well. I am glad that I have both.

New recipes and better ways to do my old recipes
This book is absolutely packed with recipes! Every recipe has a picture. Even the ingredients have pictures.I havenât even had a chance to try the recipes yet but what has impressed me is looking at the recipes for items I already make such as oat milk and yogurt. This book gives me a better explanation on making my oat milk better and a different way to make the yogurt. I cannot get unflavored non dairy yogurt in my town so I have to plan to pick some up when Iâm traveling or make my own. SproutsâI do sprouting jars but have been buying the packets âmadeâ for the jars. Now I know I can save money and buy lentils. Plus there is a resource sited if you want to know more about sprouts.New recipesâI had no idea how vanilla was made and thereâs instructions on that. I was surprised to see sourdough starter instructions. This would not be the book for expanding your sourdough recipes, just to get you started. Vegan ground beefâIâm interested in trying it!I would highly recommend this book!

Fantastic book that has lots of delicious recipes and great ways to reduce food waste in creative ways. I’m not vegan but I find the recipes infinitely useful and adaptable. The blondies are a fave.

I got this book because I was very into the premise of reducing food waste which, when you have small kids with mercurial appetites, is very much an issue. I have loved everything I’ve made so far. The Dilly Orzo soup was so, so tasty, the Feta Tofu is going to now be a regular in my life ( I snack on it straight from the jar when blood sugar gets low) and the Pantry Bean salad is a lifesaver for days I just don’t want to cook. The Peanut Butter Curry and the Golden Immunity Stew were gorgeous. My kids aren’t as interested as I’d hoped so I’m eating leftovers for days but no complaints! Super easy to follow recipes, great ideas and again, the low/no-waste message is everything. Chef’s kiss!
